Chef Charles Holtz

Charles Holtz passion for food began at a young age and was influenced greatly by his parents. Charles continued with his desire of becoming a chef and attended Westminster College and at the time trained at the RAC club, under the guidance of Chef Phillip Corrick. When Charles completed his training, his next move was to the Swallow International Hotel on Cromwell Road, where Chef Bernie Englehardt guided Charles onto the path in becoming a recognised chef within London.

In 2007, Charles attended the world famous Ecole Hoteliere Lausanne in Switzerland, where he undertook many master classes in cooking techniques. Upon graduating from here, Charles took on a position at the Covent Garden Hotel part of the Firmdale collection. Here Charles had the privilege to cook for stars of the big screen, namely Keanu Reeves and Kate Winslet.

Today, Charles determination to lead a talented brigade of chefs at Number Twelve is an exciting role and brings together a mix of cuisines and cooking styles. The menus produced, reflect the changing of seasons and in keeping with typical British and Italian flavours.
